Grilled Chicken and Vegetable Wraps with Creamy Cheese Dip


Ingredients:

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large tortillas or wraps
  • 1 cup shredded lettuce
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers (red, yellow, or green)
  • 1/2 cup sliced cucumbers
  • 1/4 cup chopped red onion
  • 1 avocado, sliced
  • 1/2 cup hummus or your favorite spread (optional)

Instructions:

  1. Prepare the Chicken:

    • Season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
    • Grill or pan-fry the chicken breasts over medium heat until fully cooked (about 6-7 minutes per side). Let them rest for a few minutes, then slice into thin strips.
  2. Assemble the Wraps:

    • Lay out each tortilla on a flat surface.
    • Spread a thin layer of hummus or your preferred spread on the tortilla (optional).
    • Add a layer of shredded lettuce, carrots, bell peppers, cucumbers, red onion, and avocado slices.
    • Place the sliced chicken on top of the vegetables.
  3. Wrap It Up:

    • Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.
    • Cut the wrap in half for easier handling.

Cheese Dip

Ingredients:

  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon cayenne pepper (optional, for a spicy kick)
  • Salt and pepper to taste
  • Fresh chives or green onions for garnish (optional)

Instructions:

  1. Mix the Ingredients:

    • In a medium bowl, combine the shredded cheddar cheese, cream cheese, sour cream, and mayonnaise.
    • Add the minced garlic, Dijon mustard, cayenne pepper (if using), salt, and pepper.
    • Mix until well combined and smooth.
  2. Chill and Serve:

    • Transfer the dip to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
    • Garnish with chopped chives or green onions if desired.

Serving:

Serve the chicken wraps with the cheese dip on the side. Enjoy this fresh, flavorful meal that's perfect for lunch or a light dinner!
